台北市查年菜業 十家輔導改善

（中央社記者戴雅真台北2014年1月20日電）台北市衛生局今天公布年菜業者衛生查核結果，共稽查131家，結果10家有衛生缺失，包括食材未加蓋等，已輔導改善完畢。

台北市衛生局食品藥物管理處長邱秀儀表示，為了確保消費者外購或外食年菜的衛生安全，衛生局針對年菜製作場所進行衛生查核，稽查北市觀光飯店、宴席餐廳、一般餐廳、大賣場等共131家，包括142處年菜製作場所。

邱秀儀指出，檢查重點包含食材選購、驗收、洗滌、切割及貯存衛生；製造場所工作人員的衛生；調理、加工、烹飪流程衛生，尤其注重衛生、熟食處理區的分隔；盛裝材質清潔及衛生；配送流程方式及衛生；凡是以真空包裝型態販售者，應以冷藏或冷凍方式販售。

邱秀儀表示，稽查結果發現10家業者現場衛生缺失，原因包括冷藏櫃不潔、食材未加蓋、未能出示產品責任險資料、建築設備髒汙等，衛生局當場開立限期改善通知單，複查均已改善完畢。

衛生局提醒，消費者如果在傳統市場等零售處選購散裝年菜，應注意製作及販售現場是否清潔、販售熟食的業者應戴手套或使用乾淨的器具拿取、現場即食食品應有防護設施，避免蒼蠅、蟑螂等病媒及灰塵的污染等。至於採購回家的年菜，需注意保存方式及復熱是否完全，並儘快食用完畢，以確保新鮮及食用安全。
